Hi.  Jan here.  Today I want to share with you some of the top resources on dairy free gluten free recipes that I’ve found in my journey across the Net.  The first one I’ll list requires a membership – yet it is a very organized site.. so it may be worth the $10 a month fee.  This is for you or your child’s health, after all.  It is called Onceamonthmeals.com.

With this site,  you get organized grocery lists, recipe cards, freezer prep instructions, labels, and simple “step by step” recipe directions and procedures. You will NOT need to use Google Docs – it is all right at the site.  There are seven groups you can choose from – such as “Mini Menu” – designated as a smaller, simpler method for preparing “family-friendly” freezable recipes you can warm up Freezable Recipes.

Quick Italian Salad: Cooking Video

Quick Italian Salad today for you.  Components are romaine salad (or any salad greens), cucumber, black olives, cherry tomatoes, carrots, pickled pepper, salt, italian seasoning, garlic powder/parsley, black pepper, olive oil, vinegar and  italian cheese blend.

 

 

Zesty Main Dishes: Healthy Eating with This Fare:

Grilled Chicken with Tomato-Avocado Salsa

For the salsa –   spicy-food

4 ripe plum tomatoes, chopped or 12 cherry tomatoes, halved
1/2 small red onion, finely chopped
1 jalapeño chili pepper, seeded and diced
2 tablespoons chopped fresh cilantro
1/4 cup fresh lime juice
1/2 avocado

Copycat Baked Chicken Chimichangas

Sumptuous, mouth watering

will bring your family running to the dinner table every time, without you even having to call them .  The wonderful aroma will be enough to stir their interest.  This meal is very filling, and adds an international flavor.   Bon appetit!

This recipe is easy to make using leftover chicken.   Feel free to substitute cooked ground beef or chopped steak.

2 1/2 cups chicken, cooked, shredded
2 tablespoons olive oil
1/2 cup onion, chopped
2 garlic cloves, minced
1/2 tablespoon chili powder
16 ounces salsa
1/2 teaspoon cumin
pinch of salt
6 ? 10 inch flour tortillas
1 cup refried beans
Olive oil (for basting)
Sour Cream
Guacamole

Thanksgiving: Are You Ready?

Thanksgiving is almost upon us, and I have a very resourceful website for ya’ll.   It includes holiday humor, suggested videos “to get through the holiday” with a smile on your face, as well as many cooking recipes/tips, decoration ideas, and novel drink notions.

It even has an iPhone application to aid you ladies (or men) in organizing your day.  This should help relieve the pressure, as well as organizing your Thanksgiving!
